Master Biscuit Mix: Pancake Roll-ups

Master biscuit mix with added eggs makes a fluffy crepe-like dessert

Our master biscuit mix can be used in many ways for breakfast lunch or dinner. Previously we gave you two recipes; one like Bisquick® and one that is gluten-free. You can use either master mix, fruit and yogurt to make breakfast or dessert that the kids will love. The twist to this recipe is that it is more like a crepe than pancake. Bon Appetite!



Pancake Fruit Roll
Yields 6
Kids will love to help make these simple pancakes.

  1. 2C master biscuit mix with added powdered milk
  2. 1 C water divided
  3. 6 eggs
  4. 6 oz tub fruit-flavored yogurt
  5. 1 C chopped fruit
  6. Your choice of topping
  1. Preheat griddle to medium heat
  2. Place egg yolks and whites in a bowl,
  3. Whip with a whisk or egg beater
  4. Add master mix and stir
  5. Add 1/2 C water while stiring
  6. Add more water until it is the consistency of thick cream
  7. lightly oil the pan and pour 1/2 C of batter in the middle,
  8. Tilt the pan to spread the batter into a thin, large circle
  9. Flip the crepe over when it loses its gloss
  10. Cook another minute and place the crepe on a plate.
  11. Spread 1 T fruit and 1 T yogurt along one edge of the crepe an roll it up into a log.
  12. Adorn with whipping cream, fruit, yogurt or powdered sugar as desired.
