Kids Love It: Nutrient-Rich Waffles

Buckwheat wafflles with flax seeds and whipping cream are a healthier choice for breakfast.

Kids love buckwheat waffles with flax seeds and whipping cream for breakfast.

Here’s a Master Mix Recipe that kids will love even though it is very nutritious. The secret ingredients are ground flax seed, whole wheat and buckwheat flour But,  there is an interesting back story about the flax  seed.

Barlean’s Flax and Fish Oil  Over 25 years ago, Dave Barlean was commercial Fishing next to me near Lummi Island  and marketed his own premium quality salmon. When fish stocks dwindled he started a  new venture with his family and went around town of Ferndale talking about the health benefits of consuming flax seed oil.

Flax is a good source of omega 3 faty acids.

Flax is a good source of omega 3 fatty acids.

He then invented a cold press that made  a far superior flax seed oil and his son Bruce. began to distribute it across the United states along with organic fish oil. Today, Barlean’s Organic Oils are a top-seller throughout the United States and for good reason: the oils are organic and undamaged during processing.

Why is this important?  Dr. Andrew Weil explains that our bodies cannot make omega 3 and omega 6 fatty acids to control important body functions. It needs to come from the food we eat, But Omega 6 is readily available in the seeds, nuts and cooking oils we use while the Omega 3 fatty acids are available in fewer foods, namely salmon and cold water white fish.  The net result is the imbalance of Omega 3 and 6 which, according to Dr. Weil, is causing lots of different chronic  illnesses.

Now you know the rest of the story.  This explains why vegetarians will often consume salmon or deep cold water white fish in moderation.   It explains why Dr. Weil suggests adding ground flax seeds or fish oil to meals if approved by your physician.
